Confetti Low Carb Turkey Salad

Diced cooked turkey is combined with colorful vegetables (red sweet pepper, celery, green onion, tomatoes and avocodo) for this main dish salad.

Ingredients

* 1/2 cup finely diced red pepper
* 1/2 cup finely diced celery
* 1/2 cup thinly sliced green onions
* 1/2 cup sweet pickle relish
* 1/2 cup mustard-mayonnaise blend sandwich spread (Dijonaise)
* 3 hard cooked eggs
* 3 cups diced cooked turkey
* 1/2 teaspoon salt
* 1/2 teaspoon lemon-pepper seasoning
* 12 large butter lettuce leaves
* 2 medium ripe tomatoes, sliced
* 1 cup alfalfa sprouts (optional)
* 1 medium ripe avocado, sliced

Method


In a medium bowl mix red pepper, celery, green onions, pickle relish and sandwich spread. Peel and dice hard cooked eggs and fold into mayonnaise mixture. Add diced turkey, salt and pepper; cover and refrigerate until ready to serve. To serve line 6 plates with two lettuce leaves, divide turkey salad between plates; garnish with tomato slices, sprouts, and avocado.
